The nose opens with aromas of dark cherry, raspberry, cherry cola and mocha, layered with delicate floral notes, cedar and a subtle hint of forest floor. The palate is generous yet refined, with vibrant red fruit, balanced acidity, fine tannins and a long, persistent finish.
Sourced entirely from our Churchside estate vineyard. Destemmed without crushing and cold soaked for 3–5 days. Fermented in large French tonneaux, with 100% malolactic fermentation in barrel. Aged for 18 months in French oak, 20% new.
Food Pairing: Pair with wild mushroom gnocchi with thyme, creamy pancetta and shiitake mushroom pasta, pan-seared duck, or marinated flank steak for a memorable meal.
