2023 Stirling Barrique Pinot Noir

Sourced from entirely from our Churchside Vineyard. Destemmed, no crushing, and cold soaked for 3-5 days. Fermentation took place entirely in large tonneaux, and 100% malolactic fermentation in barrel. Aged for 18 months in seasoned oak from Stirling Ontario.

Aromas of sweet red fruits layered with darker berry notes, dried herbs, baking spices, and delicate dried flowers. The palate is generous and fruit-forward, yet balanced by fresh acidity. Savoury undertones and earthy complexity emerge on the mid-palate, carrying into a long, rounded, and persistent finish.

Food Pairing: A beautiful match for wild mushroom pasta, roasted beet salad with warm goat cheese, or braised lamb shanks and roasted fall vegetables.
