The nose opens with ripe red fruits, cola, and roasted coffee, layered with soft florals, signature Churchside spice, and earthy cedar tones. The palate is full and rounded, with vibrant fruit and spice interplaying beautifully. A rich, elegant texture is lifted by fresh acidity and framed by firm, fine-grained tannins, leading to a long, evolving finish.
Sourced from entirely from our Churchside Vineyard. Destemmed, no crushing, and cold soaked for 3-5 days. Fermentation took place entirely in large tonneaux, and 100% malolactic fermentation in barrel. Aged in French barrels, 20% new for 18 months.
Food Pairing: A perfect match for grilled portobello mushrooms stuffed with goat cheese, thyme, sour cherries, and double-smoked bacon. It also pairs beautifully with slow-roasted striploin, classic Cacio e Pepe, or wild mushroom gnocchi with thyme.
