Stone fruit, melon, flint, and wet stone greet the nose. Palate is full and expressive with green melon. Bright acids showcase a distinctive sense of place. Round and cleansing with a soft, long finish.
Destemmed and whole berry pressed, then cool fermented in stainless steel at 14 C for 10 days. No malolactic fermentation.
Pair with pan-seared halibut with lemon caper butter sauce; golden beet and goat cheese salad; baked Brie with almonds; and cantaloupe with Prosciutto.
