Destemmed with no crushing, then cold soaked for 3-5 days. Fermented in large tonneau. Aged in 100% French oak (20% new, 80% seasoned). Full malolactic fermentation in barrel.
Dark red fruit, floral tones, wood smoke, and bacon fat appear from the glass. Dried flowers and ripe, almost sweet red fruit are expressed in the mouth. Beautiful weight is balanced with fine tannins and delicate acids. The finish is long and evolving, replaying the fruit weight balance with great length.
