That’s why Closson Chase is very honored to announce that one of its wines, the 2008 South Clos Chardonnay, has been selected to be served for Ferran Adrià, the world’s greatest and most famous chef, who is being honored in Montreal for his great achievements in the world of gastronomy.
On Monday night, November 28, this hyperinventive Catalan chef, whose cutting edge El Bulli was for years considered the world’s best restaurant will be the guest of honor of a dinner hosted by the Institut de tourisme et d’hôtellerie du Québec, the food, wine and hostelry school located in Montreal. A special menu focusing on local food and drink has been put together by Frédéric Laplante, chef at Québec City’s La Tanière, probably the restaurant that is closest to Adrià‘s spirit in Québec.
In that creative menu, Deborah Paskus’ reserve cuvée, the South Clos, was selected to accompany an exotic dish of arctic salmon with a banana and almond purée, honey emulsion and dried capers. The fruity yet mineral character of this chardonnay from Prince Edward County, heightened by careful oak aging, will surely provide a perfect counterpoint to this dish.
